Brazil Santo Antonio

Fazenda Santo Antonio is a large estate located in the region of South Minas. As is typical of the many estates located in this region, coffee is grown at altitudes averaging roughly 1,000 meters above sea level. This lot from Fazenda Santo Antonio exemplifies the tried and true pulped natural process for which Brazilian coffees are known. When the coffee cherries are harvested, the outer fruit is removed and the sticky, sweet fruit mucilage is left to dry on the bean. While the coffee is dried over the course of a week on the patio, in the sun, it absorbs the fruit pectins. The result is an enveloping aroma of coffee cherries and blossoms, while the cup offers sweet honey, chocolate and the kind of softness that can only be found in South Minas coffees.
