We combine our Mexico Dark and Mexico Medium to create Deep Disco, a blend that reveals the best of both roasts. It's sweet, silky smooth, and bursting with the deep deep cherry flavor that characterizes our Mexico beans.

Blend Profile

Deep Disco, our Levitation Blend, highlights the exceptionally versatile beans of the Malinal Cooperative in Mexico. In partnership with Cafes Sustenables and San Cristobal coffee importers, the farmers of Malinal track hundreds of quality factors to create a bean that shines in both medium and dark roasts. This blend balances the brightness, fruit, and chocolate flavors that appear in the same bean at different roast levels.

About Gimme Blends

Each of our blends starts with an idea. Sometimes we're inspired by a craft beer or fine wine; sometimes we want to showcase an outstanding bean or create our own version of a traditional blend. Our Master Roaster takes this idea into the cupping room, where we spread out a palette of single-origin beans. The blend comes together like a puzzle, piece by piece. First comes the anchoring base note; next we choose the high note and finish. Finally we tune the proportions to bring the whole mix into balance, so that no one flavor dominates. The resulting blend is greater than the sum of its parts.
