El Jardin is a relationship coffee, sourced directly from origin — in this case, that origin is Aida Battle's very exciting Tablón Project. Aida has gained much-deserved fame in the past 10 years as the chief executive of Everest SA, where she has been uncompromising and daringly innovative in her pursuit of quality. Recently, Aida has extended her talents to act as marketer for Beneficio Las Tres Puertas, a mill that manages a network of 17 farms, including Finca Sierra Nevada, where this coffee originates.

Differentiation means value added, and is the name of the game for Aida’s Tablón Project, which divides each of the 17 member-farms into various tablón, or plots, each of which is picked, processed, and tasted separately to retain the individual characteristics of the tablón. This lot comes from El Jardin, a tabl&oactue;n at the Finca Sierra Nevada family farm that boasts 100% bourbon variety, excellent yield, and one heck of a future. This year’s crop shows honey and orange, as well as brown sugar and florals.

Certifications Finca Sierra Nevada is Rainforest Alliance certified.
Fair Labor Practices The Mesa-Hill family provides a school and clinic for every worker on their three farms. There is also a kitchen on each farm as well. They pay 25% more than the minimum wage in El Salvador.
Habitat Preservation The farm manager uses only fertilizers and fungicides approved by Rainforest Alliance.
