When Elk Hill Estate began planting coffee trees in 1854, farmers left the native forest standing to provide shade for the coffee. Today, the old-growth silver oak and rosewood trees create a habitat for the wild elephants that wander through the plantation from time to time. In the cup, Elk Hill is woody, with lingering notes of the cardamom and vanilla that farmers plant between the coffee trees.
