Upstate Espresso Bars Using New Local Milk

By Janet Murray | Oct 20, 2008

Hillcrest Dairy is the new milk vendor for our upstate espresso bars. 70 Holstein cows graze on lush grasses and exercise on 20 acres in the fresh air and sunshine.

Evidence of grazing. This girl liked to pose for the camera.

The farm is located among the rolling hills overlooking Owasco Lake, one of the Finger Lakes of upstate New York.

Cows are never administered hormones and every cow has a name, like Hannah above.

Calfs share the farm with two Jack Russel terriers, 1 horse, chickens and all those cows.

Hillcrest milk received top ratings during a blind taste test among staff milk aficionados.

Hillcrest milk has nothing added or taken away, which gives it the full, rich flavor we've been searching for.

Milk is pasteurized and packaged hours, not days, after milking.

Have you ever tried overcoming the battle to serve raw milk? You know, the real stuff straight from the cow, before they kill everything good in it in homogenization and pasteurization?
